Dehollain 1 PROFESORA TITULAR DE NUTRICION, UNIVERSIDAD SIMON BOLIVAR, CARACAS, VENEZUELA Recientemente se han intensificado, en gran medida, los esfuerzos internacionales para apoyar el estudio y la obtención de los métodos más idóneos para efectuar la medición y la vigilancia de la seguridad alimentaria en hogares (SAH), dado el aumento en los niveles de pobreza asociados a la aplicación de los programas de ajuste macroeconómico (Sharma, 1992). La necesidad de vigilar la modalidad y el volumen del acceso de los hogares a los alimentos proviene del reconocimiento de que la suficiencia alimentaria al nivel de naciones, regiones o comunidades no implica la adecuada distribución entre hogares, y menos aún entre sus integrantes (FAO, 1991).
